Delicious Hawaiian Pineapple Fried Rice made with sweet pineapple, fried ham or Spam, red bell pepper, scrambled eggs, green onions, carrots, and peas, all tossed in a simple, flavorful sauce.

Hawaiian Pineapple Fried Rice is a fun, colorful dish that brings sweet‑savory island flavor to your table in just minutes. It’s loaded with juicy pineapple, tender veggies, fluffy jasmine rice, and your choice of crispy Spam or ham, making it easy to customize based on what you have on hand. Using day‑old rice keeps everything perfectly fluffy, while the simple homemade sauce ties it all together with that classic Hawaiian‑style taste. It’s quick, flexible, and perfect for busy weeknights or summer gatherings.
You will need 2 cups of cooked jasmine rice. Day‑old rice is best because it’s drier and firmer, which helps it stir‑fry without turning mushy.
Make the sauce. In a small bowl, whisk together 1/4 cup low‑sodium soy sauce, 1 tablespoon oyster sauce, and 1 teaspoon toasted sesame oil. Set aside.


Heat 1 tablespoon of cooking oil in a large skillet or wok over medium‑high heat. Add the diced Spam and cook until the edges are golden and crispy. Remove from the pan and set aside. If desired, ham can be substituted.
In the same skillet, add the 2 scrambled eggs and cook just until they’re set. Remove from the pan and set them aside with the Spam.
In the same skillet, add 1 tablespoon of cooking oil along with 1/2 of a diced red bell pepper and 1/3 cup of diced carrots. Stir-fry for 5–6 minutes, or until they reach your desired level of softness.
Add 1 cup of pineapple chunks and 1/2 cup of thawed frozen peas to the skillet and cook for a couple more minutes until everything is heated through.
Add the cooked rice to the skillet, breaking up any clumps as you go. Stir‑fry for a couple of minutes, just until the rice is heated through.
Add in thinly sliced green onions.
Add the sauce to the skillet, tossing everything together until fully combined and coated.
Return the Spam and scrambled eggs to the skillet, and gently fold everything together until well combined.
